Lychee Ginger Cooler

The best recipe to put the oodles of Lychee to good use! Refreshing, easy and super healthy! This cooler makes for a perfect summer drink, and you can stock it in refrigerator too for good 48 hours. I dropped lemon since it's strong taste doesn't balance well with the delicate flavour of Lychee, which is why I have kept very minimal quantity of Ginger too so that it doesn't overpower. Do try and don't forget to tag me in your creations!


1 kg Lychee

1/2 cup water

1 cup Sugar

1 tbsp Ginger, grated

3 cups water, chilled



  1. Gently peel the skin of all the Lychee fruits and scoop out the white flesh.

  2. Blend all the peeled Lychee flesh in a food processor with Ginger, Sugar & 1/2 cup water.

  3. Transfer the juice to a large bowl and add the chilled water in it. Stir it well and add more sugar if needed.

  4. Transfer it to glasses and top it with some muddled Lychee. Serve chilled.
