Easy Vegetable Poha

I miss waking up late and preparing breakfast in a jiffy while rushing to office. I used to have a list of quick and delicious breakfast options and Vegetable Poha topped that list. While we have all the time in the world now, I still feel that there are some folks who don't like investing too much time in the kitchen at the start of their day. This easy Poha recipe is certainly going to be your favorite if you fall in the list of people :)
INGREDIENTS - 2 cups poha or rice flakes 1 large onion 1 large potato, chopped 1 large tomato, chopped
1/2 cup peas 3 green chillis, finely chopped
2 tbsp oil
2 tbsp Coriander, chopped
Salt, as per taste
1 tbsp Peanuts, optional
1 tbsp mustard seeds
8-10 curry leaves 1/2 tsp turmeric powder
1 tbsp lime juice
PROCESS - 1. Add the poha in a strainer and gently wash it thoroughly under running water. Drain the excess water later, and keep it aside for later use. 2. Take a thick bottomed pan and heat the oil in it. Throw in the mustard seeds and when they start to splutter, add the Peanuts and turn them slightly brown by cooking for approximately 2 minutes.
3. Now add the curry leaves, onions and sautee them until they turn soft and golden brown, perhaps roughly for 3-4 minutes.
3. Now add the chopped tomato, potato, peas, green chillies and cook them for another 3-4 minutes on medium flame or until they don't look raw.
4. Now add the soaked Poha and mix this well. Cover it with a lid and heat for another few minutes on medium flame.
5. Transfer it to a plate and garnish with chopped coriander and lime juice. Serve hot.
