Pizza pinwheels are clearly my newest favorite snack. Soft dough smothered with Marinara sauce and packed with your favorite vegetables, cheese, and baked to perfection. It is a fun twist to your usual Pizza and sure to impress any Italian food lover!

2.5 cups all purpose flour
1 tsp instant dry yeast
2 tsp sugar
2 tbsp oil
1 tsp salt
1 cup lukewarm water
1 cup marinara sauce
2 cups chopped mushrooms
2 cups chopped capsicums
2 cups chopped onions
1 cup chopped Jalapenos
1/2 cup dried oregano
1/4 cup black pepper powder
400 gms cheese, grated
In a bowl, mix together all dry ingredients – all purpose flour, instant yeast and sugar.
Add oil in this and gradually keep adding warm water to this batter.
Mix everything and knead this to get a small dough for 5-8 minutes properly. This will activate the yeast.
Cover this with a cloth or cling film, preferably in a warm place for an hour atleast.
It will turn double in size in an hour. Knead it again on a working bench with some flour.
Dust the working bench with some all purpose flour.
Roll the dough into a rectangular shape neither very thin nor too thick.
Smear some marinara sauce all over the base evenly.
Sprinkle the chopped veggies, grated cheese, dried oregano and black pepper powder over it respectively in this order.
Begin with one side of the rectangle, gently start rolling the dough and press the edges to seal it properly.
Wrap the dough in parchment paper/plastic sheet and let it refrigerate for few minutes.
Once it is out from the refrigerator, cut it into thick slices using a sharp knife.
Grease the baking tray with oil and pre-heat the oven at 180 degree Celsius.
Grease the pinwheels with some butter and bake them for 20-30 minutes until the edges are golden brown.
Let them cool for a bit and you will notice that they will get firm. Serve fresh.
