Can’t think of anything more easy and delicious when it comes to serving vegetables to my husband! He is particularly snobby about flavours and spices in his meals so this easy and quick Vegetable Stir Fry comes to the rescue while serving him boring beans to peppers. I often serve them with Ramen or Rice, basis availability and either of them work perfectly well in terms of flavour and adding volume to the dish, making it a wholesome meal in itself 🙂
Quick Vegetable Stir Fry

1 cup Mushroom, chopped
2 small Bell Peppers, sliced
1 Onion, sliced
1 cup Carrot, sliced
1 cup Baby corn, sliced
1 tbsp olive oil
1 tbsp corn starch
2 tsp soy sauce
1 tsp vinegar
4 garlic cloves, minced
1 tsp sugar
Sesame seeds, for garnishing
Take a large skillet or thick bottomed pan add some olive oil it. Throw in the chopped carrot, bell pepper, mushroom, beans and onions along with some salt to taste.
Saute the vegetables on low flame for few minutes until they get tender.
In another small bowl, whisk together soy sauce, vinegar, sugar, garlic, chilli sauce and corn starch.
Pour this over the tender vegetables and cook them well on medium flame until the sauce is thickened and mixed with the vegetable. Add some boiled ramen or rice at this point and mix all the ingredients together we’ll.
Garnish with some sesame sesame seeds and serve hot!
