Maiden attempt at cracking India’s most loved dessert will surely be one of the few things I will remember about this lockdown. Jalebi is the undisputed winner & the most popular dessert that is loved beyond geographies. It is best enjoyed piping hot, or at room temperature with some rabri.
Instant Crispy Jalebi

For Jalebi Batter
1 cup all purpose flour
1/2 cup curd
1 tbsp corn flour
1/2 tsp baking soda
2 tbsp water
250 gm oil, for frying
1 pinch yellow food color
For Sugar Syrup
1/2 cup water
1 cup sugar
1/2 tsp green cardamom powder
1/4 tsp saffron strands
Take a bowl and mix together all purpose flour, corn flour and curd. Whisk it well in circular directions.
Add the baking soda and some water to give it a running consistency. Cover and let it rest for 30 minutes.
Now, take a thick bottomed pan and put the water in it, along with the sugar, cardomom powder, yellow color and few saffron strands. DIssolve the sugar completely on medium flame.
Next, make a cone out of a plastic zip lock pouch and pierce a tiny hole at the bottom. Pour the Jalebi batter in it.
Heat the oil in a thick bottomed pan and make round spirals of Jalebi by gently squeezing the cone.
Turn them over using a spoon very carefully to ensure both sides are cooked and turn golden brown in color.
Transfer the Jalebis instantly to the warm sugar syrup and dunk them in it completely for 10 seconds.
Finally, plate them in a serving dish and serve hot.
