This is my healhiest attempt at cracking a pizza at home. It is one of the most loved dishes at home, and surprisingly easy to make as well. You can ditch the cheese as well to make it completely healthy 🙂
Oats Flatbread With Garlic Tomato Sauce

1 cup Oats flour
1/4 cup whole wheat flour
1/2 cup Yogurt
1/2 tsp Baking powder
1/2 tsp Salt
4 medium sized Tomatoes
12-15 Garlic cloves
1 tbsp Oil
1 tsp salt
1 tsp black pepper
1 tsp Oregano
1 tsp red chilli powder
1 tsp Lime juice
2 Capsicum, chopped
1 Onion, chopped
200 gms Mushroom, diced
1 tsp Black pepper
1 tsp Salt
2 tbsp Oil
1 tbsp cheese, optional
Take a big bowl and mix oat flour, wheat flour. baking powder and salt together.
Now add the yogurt and knead it into a soft dough. Cover with a clingfilm and leave for 15 minutes in refrigerator.
Lets start making the sauce by blanching the tomatoes in boiling water. Later, blend it in a food processor to make a puree.
Now, take a thick bottomed pan and add 1 tbsp oil in it. Throw in the chopped garlic and sautee it for 2 minutes. Also, add the salt, lime juice, red chilli powder, oregano & pepper to season it.
Mix the puree in the pan and let it simmer on medium flame for 10 minutes until the sauce has a thick consistency. Keep it aside for use later.
Now take another pan and add 1 tbsp Oil in it. Throw in the diced Mushroom along with a pinch of salt & black pepper. Sautee it well for 2 minutes and transfer it to a plate.
In the same pan, add 1 tbsp oil along with sliced Onion & capsicum. Season with a pinch of salt & pepper, while you sautee it as well for 2 minutes. Transfer to a plate later.
Now dust some flour on the working bench. Divide the dough into 3 equal parts and roll it thinly in an oval shape.
Place this flatbread on a hot non stick pan, brushed with oil. Let it cook on both sides evenly, until you notice a brown color similar to a chappati. Keep the cooked flatbreads in a cloth to make sure they don’t dry out quickly.
Now smear the Pizza sauce evenly on one flatbread. Top it with the sauteed vegetables done previously, and garnish it some oregano. You can also top it with some grated cheese, which is totally optional.
Now pre-heat the oven at 180C & grill the flatbreads for 10 minutes, ensuring there is no heat at the bottom. We just need to grill the vegetables and melt the cheese a bit before serving.
