We bring to you 4 such nibbles that are  easy to cook and perfectly suited for the season!

Classic Watermelon  Salad

Classic Watermelon  Salad

Ingredients                                                

  • Watermelon – 250gm
  • Mint – 25gm
  • Feta cheese – 25 gm
  • Honey – 10gm
  • Black pepper – 5gm

Method

  • Cut the watermelon in cubes.
  • Chop mint & mix with honey & black pepper.
  • Toss the watermelon with the dressing.
  • Sprinkle some feta cheese for Garnish.
  • Serve chilled.

Chilled Maple Melon & Mint Soup

Chilled Maple Melon & Mint Soup

Ingredients                                                      

  • Musk Melon – 250gm
  • Maple Syrup – 35gm
  • Mint – 70gm
  • Brown sugar – 10gm
  • Salt – to taste
  • Black Pepper  -10gm
  • Lemon Juice 15 gm
  • Tobasco – 10 gm(Optional)

Method

  • Cook the Musk melon in the pan with Maple syrup & water.
  • Add Brown sugar, Salt & Black pepper.
  • Dry half of the Mint & Mix half with the Melon.
  • Grind all Together.
  • Strain the mixture with Conical Strainer.
  • Add lemon juice & salt as per the taste.
  • Chill the soup in the refrigerator for 30 minutes.
  • Crush the dried mint leafs on the top & serve chilled.

Baked Broccoli with Cilantro & Apricot Salsa

Baked Broccoli

Ingredients                                                      

  • Broccoli -150gm
  • Garlic – 10gm
  • Salt –  to taste
  • Black pepper – to taste
  • Parmesan cheese –  25gm

For salsa

  • Corriendar –  25gm
  • Apricot – 50gm
  • Salt –  to taste
  • Black pepper –  to taste
  • Lemon  – 1
  • Apple Juice – 25ml

Method-:

  • Make florets of broccoli.
  • Blanch it & sauté with garlic.
  • Season the Broccoli.
  • Sprinkle Parmesan cheese on the top.
  • Bake for 7 minute On the temperature of 140*.

For salsa

  • Chop coriander & apricot.
  • Mix with rest of the ingredients.
  • Serve with Hot Baked broccoli.

Steamed Corn with Tomato Relish

Steamed Corn with Tomato Relish

Ingredients                                                 

  • American corn  – 200gm

For relish

  • Tomato -100gm
  • Onion  – 50gm
  • White wine vineger  – 30gm
  • Sugar – 20gm
  • Salt- 5gm
  • Olive oil – 10gm

Method:-

  • Sauté the Onion in olive oil.
  • Add Tomato & cook till soften.
  • Add vinegar & sugar & cook for 10 Minutes.
  • Season it & let it cool.
  • Serve With Hot Steamed Corn.
